Blend or use a food processer to combine the oatmeal, monkfruit, cocoa powder, and baking powder. Process until no chunks of oats remain.
Whip three egg whites until thickened and fluffy.
In a bowl, combine the dry mixture with greek yogurt, vanilla extract, and oat milk. This will be a little difficult to combine and will seem thirsty, but resist the temptation to add more liquid. Creates a stiff batter. Taste to ensure it has adequate sweetness and if lacking, add more monkfruit.
Incorporate 1/3 of the egg whites. Add the second third, and then fold in the remaining amount. Don't be overly concerned about fluffiness here.
Scrape into a 9x9 pan, maybe with parchment paper, maybe with Pam spray. Top with chocolate chips, shredded coconut, or nuts if desired!
Bake for 18 minutes.
